Borgo Italia was born from a friendship that centers on a deep respect for this very type of cooking. Paul Ferrari, Fabio Dalle Vacche and Franco Camboli all share a common upbringing centered on time-honored recipes prepared by their mothers and grandmothers. Paul's long career in seeking out Italy's highest quality ingredients, Franco's experience as an esteemed pastry chef and Fabio's restaurant upbringing with his beloved mother Luigina as the cook, combine to offer guests a dining experience reminiscent of the tucked-away restaurants and country kitchens in Italy's small towns.
Through their shared Italian heritage, the team at Borgo Italia draws on cooking styles from the Emilia-Romagna, Liguria, and Toscana regions, though dishes are proudly featured from throughout Italy.
